Another bonus: You likely have the ingredients on hand right now. This recipe is inspired by both Thai and Indian cuisine. The base of flavor is Thai-inspired green curry paste. Then we add garlic, ginger, and shallot and simmer in creamy coconut milk. Lentils and a few more spices and seasonings are added, making it sort of like a distant cousin to Indian dal.
