🧾 Ingredient Notes
Sourdough Bread – I prefer sourdough bread because it holds up well to toppings without becoming soggy. You can use any bread of your choice, such as white bread, whole wheat bread, or even multigrain bread. Butter – I prefer to use unsalted butter so I can control the salt in my recipe. Tip: Infuse the butter with garlic or herbs for added flavor. Onion – I have used red onion here. Sometimes I mix up spring onions (scallions) with regular onions. Peppers – I have used green and red peppers. You can any color bell pepper here. Green Chilies – I am using Thai green chilies that are spicy. You can use serrano peppers for a less spicy taste. Tip: Remove the seeds for a milder flavor or leave them in for extra spice. Cilantro – Adds a fresh herby flavor. Parsley can be used as a substitute if cilantro is not preferred. Red Chili Flakes – It adds a spicy kick to the topping. Adjust the amount as per liking spice level. Dried Oregano – Crush the dried herbs between your fingers before adding them to release their aroma. Cheese – Here I have used Mexican blend cheese. Use any cheese blend you prefer, such as cheddar, mozzarella, or Monterey Jack.

💭 Expert Tips
Choose the Right Bread: Opt for a sturdy bread like sourdough or a thickly sliced white bread such as Texas toast that can hold up to the toppings without becoming soggy. Prep and layer topping mixture: Ensure all your onions and peppers are finely chopped and evenly distributed on the bread slice to ensure each bite is flavorful. Don’t Overload: While it may be tempting to pile on the topping mixture, be mindful not to overload the bread slices. Too much topping mixture can prevent the bread from becoming crispy. Serve Immediately: Chilli cheese toast is best enjoyed hot and fresh out of the oven to enjoy the best crisp texture. Serve it immediately with your favorite dipping sauce or accompaniments.
🥣 Storage & Reheating
Store leftovers in the refrigerator in an airtight container for 2-3 days. Keep in mind that it gets soft and soggy after storing. Reheat in the oven at 425°F for 4-5 minutes or until heated through and the cheese is melty and gooey again. Reheat in the air fryer at 400°F for 2 minutes, or until heated through and crispy.
🍽 Serving Ideas
Snack: Serve it alongside a cup of hot tea or coffee for a cozy snack time. Appetizer: Cut into smaller pieces, arrange on the platter, drizzle some ketchup or Maggi’s sweet chili sauce, and serve as an appetizer at parties or gatherings. Meal: Enjoy as a quick and easy weeknight meal paired with a bowl of soup (such as roasted red pepper soup, spinach soup, or Indian tomato soup) or a side of roasted root vegetables or salad.
