❤️ You’ll Love This Coconut Date Balls

Quick and Easy: You’ll need only 6 ingredients and 10 minutes to make these energy balls. Naturally sweetened: Yes, these coconut date balls are processed sugar-free. Dates provide natural sweetness. Taste & Texture: Nutty, chocolatey and sweet with a soft, chewy texture. Nutritious: These coconut date balls are packed with nutritions and very filling. So it satisfies your sweet tooth and gives you a great burst of energy. Versatile: Energy balls can be a filling afternoon snack or after-meal healthy dessert. It can be packed for your trip to hiking, beach or picnic for your family to munch on as a snack.

🧾 Ingredients For Date Energy Balls

Dates: I prefer to use Medjool dates. They are big, rich, juicy and plump with soft skin. Any variety works as long as they’re soft, moist and not overly dry.  Almonds: You can use your choice of nuts like pecans, walnuts, cashews, etc. Desiccated coconut: I used the one I get from Indian grocery stores which are very finely shredded. I have tried with unsweetened shredded coconut and it works fine too. Be sure to use unsweetened.  Cocoa powder: It provides enough chocolatey flavor. I have used regular baking type unsweetened cocoa powder. Chia seeds: It provides more nutritional value to the date energy balls. It is optional though. You can try adding flaxseed meal or sabja seeds (aka falooda seeds). Ghee: It gives a nice flavor to coconut date balls. To make it vegan, you can use coconut oil instead.

👩‍🍳 How To Make Energy Balls With Coconut & Dates? 

  1. Take dry ingredients (almonds, coconut, chia seeds and cocoa powder) in a food processor jar.
  2. Pulse it until are almost ground. The texture should be fine coarse.
  3. Add pitted dates and ghee.
  4. Again blitz it until everything comes together. Take a small portion and try to pinch it together, it should come together like a ball. 
  5. Take around 1 ½ tablespoons size of the mixture in your palm.

The mixture is dry: Add more ghee/coconut oil or simply add water. Add a teaspoon or two at a time. Pulse and see if needed more. The mixture is wet and sticky: Add more powdered nuts or ready almond meal or powdered oats. You can add protein powder as well.

  1. Start rolling into a ball.
  2. Then roll the ball into the desiccated coconut to coat all the sides. This step is optional. 

💭 Expert Tips For Coconut Date Balls

Type of dates: Any type will work as long as they are moist and soft (not dry). I prefer Medjool dates. Mixture is dry: Add more ghee/coconut oil or simply add water. Add a teaspoon or two at a time. Pulse and see if needed more. Mixture is wet and sticky: Add more powdered nuts or ready almond meal or powdered oats. You can add protein powder as well. The dry ingredient will soak up that extra moisture and you’ll be able to roll into a ball.

🥣 Storage Instructions

Store these coconut date balls in an airtight glass container. Refrigerator: It stays good for 1 week. So you can make a bigger batch, store and keep snacking throughout the week.  Freezer: These coconut date balls can be frozen for up to a month. Personally, I do not like to freeze. I make fresh since these are fairly quick and easy to make.

Snacking on the go: These date coconut energy balls ate perfectly to pack for travel, hiking, picnic, beach, etc. You can keep them at room temperature for a day only. They will be soft in texture. Filling and nutritious afterschool snack for kids. Midday snack: during the evening time, sometimes you get tired of working. These energy balls give you enough burst of energy to go through the day.
