That’s what I’ve jokingly been saying recently as I shovel mass amounts of food into my mouth. I’ve been trying to add more protein into my diet (as always), but it’s hard work! Namely because it’s challenging to remember that you need nutrients more than chocolate (even though chocolate is totally more fun). I recently realized after a number of failed attempts at vegan protein bars that I should totally just make my own. So I did.And they rocked.And they’re easy.And they’re way better than store bought (there I said it). Plus, just 4 ingredients, naturally sweetened, and more than 10 grams of protein per bar! The base is peanut (or almond or sun) butter, then comes maple syrup and your favorite protein powder (I list mine below). And the final touch? POPPED AMARANTH. This mighty grain contains plenty of nutrients and protein and has a neutral, slightly nutty flavor. Not to mention, it pops up beautifully on the stovetop in no time (10 seconds!).
