🧾Ingredient Notes

You’ll need 8 ingredients only to make this delicious, refreshing raita. All the ingredients are simple and easily available in your kitchen.

Plain yogurt: Use homemade or store-bought plain yogurt (aka dahi or curd in India). Always use chilled and fresh (not sour) yogurt.  Roasted cumin powder: A must-spice powder for the best tasting raita dish. It adds a unique toasty flavor. Just dry roast some cumin seeds until aromatic and light golden brown, cool down and grind into a powder. Black salt: There is no substitute for black salt. If you don’t have it then skip it. Green chili: If you don’t like to bite into raw green chili then skip it.  Herb: Cilantro or mint can be used. Do not skip adding herb, it adds a nice fresh flavor. Tomato: If your tomatoes are too pulpy and watery then you can remove the pulpy seed part and use only the firm tomato part.  Onion: Red onion is the best choice. But white or yellow works too.

💭 Expert Tips

Always start with chilled yogurt as raita tastes best when served chilled. This should be served right away or within an hour.  Storing this raita in the refrigerator is not a good idea. Because of the raw onion, it starts to get a strong smell in your fridge. Also, veggies will leave their water and makes the raita watery and runny.

🍽 Serving Ideas

Serve with rice dishes e.g. palak rice, paneer biryani, capsicum pulao, veg pulao. Serve as a side dish with paratha e.g. aloo paratha, broccoli paratha, methi paratha. It can be served along with your Indian meal that consists of dal, rice, roti, sabzi, pickle, etc.
