Tofu is bland in taste. So be generous on spices while making this compared to paneer bhurji. Since the winter is here, green onions (scallions) are widely available. So I have used that here and cut down the amount of regular onion. If you do not have green onions on hand, replace that with regular onions. Actually tofu is really bland and tasteless. To make it flavorful, we need to add so many other dominant flavors to get the good taste and flavor. In this recipe, we are adding onion, tomato and spices to add flavors. Tofu is also known as ‘Soya paneer’ and made by curdling the fresh soy milk. It is good source of protein with other many health benefits. You should include in your diet. Step By Step Photo Instructions:
- First drained the tofu from its liquid. Then rinse under cold water. Take that in a paper towel lined plate. Using another towel, press on top and pat it. Towel will absorb the moisture. Then cover it with another paper towel. Put another plate on top and put some weight on. Keep it like this for 15-20 minutes. If needed change the towel and make sure the moisture is absorbed.
- Crumble the tofu using your hand.
- Now heat the oil in a pan on medium heat. Once hot add cumin seeds, let them sizzle.
- Then add chopped onion and green onion.
- Mix well, sprinkle some salt to speed up the process.
- Cook till they are soft and translucent.
- Now add green chili, ginger paste and garlic paste.
- Mix well and saute for a minute or till the raw smell of ginger garlic goes away.
- Now add tomatoes.
- Mix and cook till they get soft and mushy.
- Now add capsicum.
- Mix and cook for 2-3 minutes.
- Now add remaining salt, turmeric powder, red chili powder, coriander powder and garam masala.
- Mix well and cook for a minute.
- Now add crumbled tofu.
- Mix and cook for 3-4 minutes. Turn off the stove. Lastly add coriander leaves and lemon juice, mix and serve. Serving suggestion: Serve this tofu bhurji as a breakfast with a bread toast.
